When I've done them in betting shops, I've just listed the horses on a betting slip and written something like "all 12 each-way doubles". They seem to accept that. Sometimes the stake I use is limited by the early price I take being available at only one bookie, but if possible, I stake so that I have a maximum of about 1% of my betting bank on any one horse. For example, yesterday the most doubles any one horse was involved in was five, so I'd have about 0.1% of my bank each-way on each double, for a total stake (12 each-way doubles) of 2.4% of my bank. I'm really just keeping level stakes of 1 point EW to keep things simple. In practice, my own stakes depend on how many doubles each horse is involved, the more doubles, the lower the stake on each individual double.
