Back & Lay to make a profit

You might have seen this title in the Betting Exchanges forum, I stole it but the answer was never exactly "revealed" :) I need to know if there is a tool where I can work out, say I backed Jon for 1st eviction in Big Brother @ 2.40, I knew his price would drop dramatically and is now 1.25 or so and I could always have made a profit on this. How do I work out how much I have to back him at and then lay him off? And when people do this tactic on Betfair, should you always be trying to make the same profit if he goes or if he stays if you know what I mean. There must be something for this? Thanks in advance :)
