Just because a horse is a favourite doesn't mean it will win, neither does it always mean it has the best chance of winning. Alot of horses that go off favourite just do so because of which yard they are from or which jockey is riing them. The trouble with the system you are proposing is that you could have 99 successful lays in a row, then the 100th one could win and you make an overall loss. That's a lot of time and wok to make a loss. And if you had one that won early, you'd be chasing your tail from the get-go and that's even more dangerous
